ETYMOLOGY
  • This dish is also known in Mandarin as “参峇蕹菜”, which is a combination of the transliteration and paraphrase of the Malay term sambal kangkung.
  • In Malay food culture, sambal is an iconic ingredient, while kangkong (water spinach) is one of the more popular vegetables in Southeast Asia. Hence the Mandarin name for the dish, “马来风光”, which has the meaning of “Malay style” or “Malay glory”
  • The combination of kangkong and sambal chilli paste is said to accentuate the aroma and flavour of both the ingredients.
  • Sambal kangkong is served in local Chinese restaurants, Malay restaurants, zi char stalls and hawker centres.
