  • 源自于潮州话 chwee kueh。
  • 水粿是一道潮州特色小吃。这道小吃的做法是将白米浆倒入铝制的碟状模具里蒸熟,制成嫩滑轻薄但又有嚼劲的米粿。 其配料的做法是将菜脯(即萝卜干)与蒜蓉炒熟后,用热油熬煮成。
  • 在新加坡,除了咸菜脯,食客也可搭配参峇辣椒食用水粿,使水粿更添滋味。
ETYMOLOGY
  • The Mandarin term “水粿” originated from the Teochew term chwee kueh.
  • Chwee kueh is a Teochew speciality snack. It is made by steaming a mixture of rice flour and water in saucer-shaped aluminium moulds to produce smooth, tender rice cakes. The topping is made by frying salted preserved radish and minced garlic, which is then simmered in hot oil.
  • In Singapore, in addition to the salted preserved radish, sambal chilli can be added for more flavour.
