  • 潮州话 chwee kueh 的意译。
  • 水粿是一道潮州特色小吃。这道小吃的做法是将白米浆倒入铝制的碟状模具里蒸熟,制成嫩滑轻薄但又有嚼劲的米粿。其配料的做法是将菜脯(即萝卜干)与蒜蓉炒熟后,用热油熬煮成。
  • 在新加坡,除了咸菜脯,食客也可搭配叁巴辣椒食用水粿,使水粿更添滋味。
ETYMOLOGY
  • The Mandarin term “水粿” is a paraphrase for the Teochew term chwee kueh.
  • Chwee kueh is a Teochew speciality snack. It is made by pouring white rice milk into aluminum dish-shaped molds and steaming them to become smooth, light but firm rice cakes. Its condiment is made by frying salted preserved radish and diced garlic, which is then simmered in hot oil.
  • In Singapore, in addition to salted preserved radish, chwee kueh can also be eated with sambal chilli for more flavour.
