The name of this dish originates from the Hokkien term tau suan.
Tau suan is a Teochew dessert made by cooking split mung beans in a soup sweetened with sugar. It is then thickened with starch before being served with pieces of fried dough sticks or coconut milk.
For added texture, chewy tapioca cubes or crunchy water chestnuts can also be included.
Tau suan is best eaten within three minutes, as the starch in the soup breaks down quickly when it comes into contact with saliva. This causes the soup to become watery and lose its appeal. (Lianhe Zaobao, 11/1/2019)
