A thick soup-like dessert made from dehulled mung beans, which can be enjoyed with fried dough sticks or coconut milk.
The term originates from the Hokkien (Minnan) dialect, Tau Suan.
Tau suan is a Teochew dessert that is made by first boiling dehulled mung beans into a soup. It is then thickened before being served together with pieces of fried dough sticks or coconut milk.
Apart from adding pieces of fried dough sticks into tau suan, chewy tapioca cubes or crunchy fresh water chestnuts can also be included for added texture.
Tau suan is best eaten within three minutes, as the starch in the soup breaks down quickly when it comes into contact with saliva. This, in turn, will cause the soup to become watery and lose its appeal. (Lianhe Zaobao, 11/01/2019)
