使用面粉或麦粉制作而成的细长面条。

由来
  • 潮州话 mee kia 的意译。
  • 除了面粉或麦粉，制作面仔使用的原材料还包括盐、薯粉、调味剂等。
  • 有说法认为面仔与面薄皆为潮州特色面食。煮熟的面仔一般呈鲜黄色，主要用作潮州肉脞面或鱼圆面的食材之一。
  • 随着人们健康与保健意识的提高，一些厂商也制作了较健康的全谷（wholegrain）面仔。
  • 若在一般面仔的原材料里添加鸡蛋，便可制作出称为 “云吞面仔” 的特色面条，专门用来煮云吞面。
ETYMOLOGY
  • The Mandarin term “面仔” is a paraphrase of the Teochew dialect term mee kia.
  •  In addition to plain flour or wheat flour, the raw materials used to make mee kia include salt, tapioca flour, and flavouring.
  • It is believed that both mee kia and mee pok are distinctive Teochew-style noodles. Cooked mee kia is usually bright yellow and is mainly used as an ingredient in Teochew bak chor mee or fish ball noodles.
  • With increasing health awareness, some manufacturers have also come up with healthier wholegrain mee kia.
  • If eggs are added to the raw materials of mee kia, a special type of noodle called “wonton mee kia” is produced and is specifically used to cook wonton noodles.
