释义

名词

DEFINITION

Noun

  1. In Singapore, lontong most commonly refers to a coconut-milk-based vegetable dish (sayur lodeh) served with steamed rice cakes. Also written in Chinese as “隆冬”.
  2. Lontong may also refer to the rice cakes themselves.

ETYMOLOGY
  • The Mandarin term “隆东” is the transliteration of the Indonesian term lontong, a type of compressed rice cake.
  • Carrots, cabbage, long beans, tofu and other vegetables are cooked in a rich, coconut-milk-based gravy, which is seasoned with curry powder, spices, lemongrass and coconut milk. The ingredients and gravy are then poured over rice cakes, and served with a hard-boiled egg, some fried grated coconut and a dash of sambal chilli.
  • Lontong rice cakes are made by wrapping white rice into a cylinder in a banana leaf, and securing it tightly before cooking it in boiling water. Lontong are similar to the Malay rice cakes known as ketupat. Both originated from Indonesia, and can be paired with lontong gravy. Ketupat, however, are wrapped in young coconut leaves woven into a diamond-shaped casing. Like lontong, they are cooked in boiling water.
