  • 有一种说法认为马蹄酥源自于福建省同安县,经早期的移民流传到新马一代。
  • 马蹄酥里并没有马蹄,而这个名称的由来有许多不同说法。
  • 有一种说法认为在明朝时期,一位叫马开山的人在同安开店售卖一种四周厚、中间薄、形状像马蹄的烘饼,因此该饼就叫“马蹄酥 ”。

ETYMOLOGY
  • Beh teh saw is believed to have originated from Tong’an county in Fujian province, before being introduced to Singapore and Malaysia by Hokkien immigrants.
  • The word “马蹄” (pronounced beh teh in Hokkien) means “horse’s hoof”, but can also refer to water chestnuts. There is, however, no water chestnut in beh teh saw.
  • One explanation for the name is that during the Ming dynasty, a man named Ma Kaishan started a shop in Tong’an selling a baked pastry that was shaped like a horse’s hoof – thick on the sides, and thinner in the middle. Hence, the pastry became known as “马蹄酥”, which is made up of the words “马蹄” and “酥” (saw in Hokkien, meaning “flaky pastry”).
  • Another explanation is that because beh teh saw is baked on the walls of the oven, the dough droops as it bakes, taking the shape of a horse’s hoof, hence the name.
  • As beh teh saw emits a fragrant aroma when being baked, it is also known as “香饼” (literally, “fragrant pastry”).
  • The ingredients of beh teh saw traditionally include flour, sugar, oil, maltose, peanuts and white sesame.
  • Traditional beh teh saw can be soaked in boiling water, milk or soybean milk, which causes the pastry to expand. Hence, it is also known as “泡饼” (literally, “steeped pastry”).
  • Although shops today can now use machines to make the beh teh saw crust, the other production processes still rely on intensive manual labour and skills.
  • Beh teh saw and pong piah are often mistaken for each other. However, compared to pong piah, beh teh saw is thicker and not as round, with a crunchier texture. The filling is similar for both pastries.
